The benefit of the stainless steel cooking surface is that it will not react with the acids in your food or impart a metal taste to your food. To make the pan induction capable, we remove the copper layer from the bottom of the pan, exposing the stainless steel layer.

I ended up having to purchase this set elsewhere due to the delay in initial stated delivery but wanted to share my review of this cookware set. We have an induction stove top. We’ve been using for 2 weeks now. It is amazing build quality. They are hefty as they should be -less chance of warping. The non stick ceramic lends to not having to use ANY oils/butter -unless called for in the recipe itself. The clean up is FLAWLESS. These are professional quality and look the part too! The finish is classic and the design bold. The feel of the pots and lids let you know they need to be cooked with.
